Tony's family history has a strong influence on what Tartufo has become and continually evolves to be. With his father and uncle restaurant owners in Naples and his mother a remarkable cook in her own right, it's no surprise that when the Percuoco family came to Australia in the 70s; so too did the beginning of Antipasto dining. Tony is proud of where he has come from and has donned the walls of Tartufo with family memories to share in the creation.
With an unrivalled love and passion for the industry, Tony believes in giving back. The very essence and future of his business relies on helping develop each and every chef that works besides him. Short-term thinking, or corner-cutting will not serve anyone, hence Tony is dedicated to mentorship. Chefs that choose to work with Tony quickly learn that it’s a balance, you give him your passion, energy and dedication, he will ensure that you are a far superior Chef.
In 2008, Tony expanded his mentorship philosophy to sharing his family methods and recipes to home cooks, launching a book illustrating Italian Cooking at its Best. Now sold out, the book sold 10,000 copies worldwide.
